The Standard Additions scripting addition contains a number of commands that make it possible to read and write files. Note: The example AppleScript code is just that and does not employ any error handling and is meant only to show one of many ways accomplish a task. The onus is always upon the User to add/use appropriate error handling as needed/wanted. It's not too hard in AppleScript but there are a few tricks. Note that there are a wide variety of ways to read from a file, such as reading in a certain number of characters, or until a certain character is encountered. I generally prefer to read the entire file into a variable and work from there for speed and simplicity. Here's how to do it:
